Whether it’s filling us up after our YB class or having it as a healthy snack, we all love a good healthy protein bar – especially if it’s packed full of mouth watering and oh-so-good-for-you ingredients! These cashew and oat bars by Lori Nedescu are really easy to make (no baking required) and can last up to a week – or less if you end up eating the whole batch!
1 cup sprouted oats
1 cup raw cashews
1/2 cup shredded coconut
1/2 cup cashew butter
2 scoops protein or collagen powder
1 tsp vanilla
4 tbsp maple syrup
4 tbsp hemp seeds
6 tbsp oat milk
2 tbsp maca
1/2 tsp cinnamon
1/4 tsp salt
1 cup chocolate chips (optional)
- Pulse the dry ingredients (except the chocolate) in a food processor until ‘crumbly’. Add in the wet ingredients and pulse until thoroughly mixed.
- Add in the chocolate chips and pulse a few more times, just to slightly break up the chocolate.
- Line a brownie pan with baking paper and press the cashew mixture firmly in.
- Cut into desired size, wrap each bar with cling wrap and place in the fridge for 30 mins
